So, my friend's birthday is tomorrow and she loves Tru Fru. You know, the extremely addictive fruit desserts coated with chocolate and cream! These cookies I made for her are inspired by the blueberry version of these snackable treats. Made with a rich chocolate cookie base, these cookies feature chewy, dried blueberries from Trader Joe's. With white chocolate-blueberry shards and a dark chocolate coating, they aim to replicate the feeling of biting into a layered blueberry Tru Fru. Recipe below!
Ingredients:
Blueberry white chocolate bark:
100g white chocolate
2 tbsp freeze dried blueberries
Cookie dough:
113g softened unsalted butter
90g brown sugar
90g white sugar
1 egg (room temperature)
1/2 tsp baking soda
1 tsp vanilla extract
1/4 tsp salt
125g all purpose flour
20g unsweetened cocoa powder
20g dutch processed cocoa powder
chopped blueberry white chocolate bark
1/3 cup dried blueberries
1/2 cup chocolate chips
Topping/bottom coat:
flaky sea salt
100g dark chocolate
Procedure:
Blueberry white chocolate bark:
Melt the white chocolate in the microwave at 30 second intervals.
Chop up the freeze dried blueberries and mix them into the melted chocolate.
Pour the mixture onto a parchment lined flat surface, place in the fridge to harden.
Once hardened, chop the bark up into randomly sized shards.
Cookie dough:
Cream together the softened butter and sugars on medium speed until light and fluffy
Mix in the egg yolk, vanilla, salt, and baking soda until well combined. Scrape the sides as needed.
Sift in the all purpose flour and cocoa powders. Stir on low speed until halfway incorporated. Mix in the dried blueberries and chocolate chips until the dough is just combined.
Scoop the dough into 14 balls and chill in the refrigerator for at least 1 hour, or overnight for the best flavor and texture.
Once chilled, place the dough balls on a parchment lined tray at least 2-3 inches apart. Press additional dried blueberries halves and the white chocolate blueberry shards on top.
Bake at 350 for 10-13 minutes, or until they look set around the edges but slightly puffed and soft in the center.
Remove the from the oven and bang the pan on your counter to create nice wrinkles. Top with a sprinkle of flaky sea salt and allow the cookies to cool on the pan for 5 minutes before transferring to a cooling rack.
Once completely cooled, prepare the dark chocolate coating by melting dark chocolate in the microwave at 30 second intervals. Dip the bottom of each cookie in the chocolate to coat. I like to even out the coating with a spatula.
Allow the chocolate to harden with the cookies upside down. You can place them in the fridge to speed the process.
Extra notes:
These cookies can be made with just unsweetened cocoa powder or just dutch processed as well. I just like the balance of using both!
If you don’t have flaky sea salt on hand, I would increase the salt to ½ tsp for a more balanced flavor.
If using salted butter, omit the additional salt.
Both freeze dried blueberries and dried blueberries I used are from Trader Joe’s.
